The baguette could become a UNESCO Intangible Heritage Site, French Culture Minister Roselyne Bachelot-Narquin announced. Indeed, a candidacy will be submitted to have “the baguette culture” included in the UNESCO intangible heritage list. Interpreting this request was the National Confederation of French Bakery and Pastry.
The baguette is the most popular type of bread throughout the country and its origin dates back to the seventeenth century, but its culture spread during the twentieth century. Its composition is very simple and includes only four ingredients: water, flour, salt, and yeast or sourdough; however, its production requires skill, solid training, and extensive experience. Each baker, playing with the dosage, dough, rising time and baking, will achieve a unique baguette. In fact, there are as many different baguettes as there are bakers. It is baked throughout the day in small portions and its recipe varies according to temperature and humidity. Inexpensive, it is a healthy food within the reach of all pockets.
However, there is a decline in the number of bakeries, especially in rural communities. Culture Minister and Agriculture and Food Minister Julien Denormandie are supporting this sector with measures in order to promote it and slow its decline.
The candidacy dossier will be submitted by March 31, 2021 and then go to the UNESCO evaluation body, which will give its opinion in the fall of 2022.
“If this national candidacy is successful before UNESCO, the inscription of this element will allow the awareness that a food practice that is part of everyday life constitutes a heritage in its own right,” the minister said.
